Weight Loss Wednesday: Fun With Fiber One

It’s been awhile since my last WLW post, since my progress has been slow, steady and not exciting enough to warrant new blog entries.  I’m still glad that I’m doing Weight Watchers; I’m 9.2 pounds down and feeling good.  I’m also glad that I discovered the awesomeness that is Fiber One Cereal. 

Pre-Weight Watchers, I would have avoided even looking at Fiber One in the cereal aisle.  It looks like boring little twigs, but it can do some amazing things for minimal WW points.  Another Fiber One benefit?  It’s often on sale at Publix and CVS.  There are no points in a serving of the original cereal and it can be used to make things like chicken parmesan, pancakes, cookies and black bean dip.

Here’s a super-easy and inexpensive treat that I’ve been making a lot lately:

Fiber One Haystacks

½ cup of Fiber One Original Cereal
2 tablespoons of Semi-Sweet Chocolate Chips
1 tablespoon of Reduced-Fat Peanut Butter

Place the chocolate chips and peanut butter in a microwave safe bowl.  Microwave them for 60 seconds.

  • Stir the melted chocolate and peanut butter together.
  • Stir in the Fiber One and coat with the chocolate and peanut butter mixture.
  • Use a tablespoon to make small mounds and let cool on a piece of foil (or pop them into the fridge, if you’re impatient like I am)

These little guys are about 1 WW point and they’re really good!  Check out the Fiber One website or Hungry Girl for other tasty ways to incorporate more fiber in your diet.
