Cooking for One: Cheap & Easy Apple Crisp

I miss the peach cobbler days of summer, but I’m happy that cooler weather and apple season are here.  Last week I got a big bag of organic apples for $3.  One girl can only eat so many apples before they go bad, so I came up this recipe from ingredients that were already in my pantry.  I’ve been making a small apple crisp with my dinner each night.  It’s agreat use for an abundance of apples!

Apple Crisp for One Recipe

Apple Mixture
1 apple peeled, cored and sliced
1/8 tablespoon vanilla extract
1 teaspoon sugar

Oatmeal Topping
2 tablespoons  brown sugar
2 tablespoons quick-cooking oats
1 tablespoon flour
1/8 tablespoon cinnamon
1/8 tablespoon nutmeg
1 tablespoon butter (softened)

 Directions

  • Place apples in a small ramekin or baking dish.  Stir in vanilla and sugar.
  • In a separate small bowl, mix together remaining ingredients and spread topping over apple mixture.
  • Bake at 350 degrees for 30 minutes.  Cool for five minutes and enjoy!

 In a hurry?  Pop it in the microwave for about two minutes
